My meal for the scrapbooking weekend was breakfast so I tried a breakfast bake that I found on Pinterest and it was very easy to make and great tasting too! With this I served my Bapple Bread, the recipe can be found under breads.

 Tator Tot Breakfast Bake

Ingredients

1 pound ground pork breakfast sausage (or cubed ham or bacon, whatever you like best) shopping list
2-4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 pounds frozen tater tots

Directions

Preheat oven to 350 degrees F (175 degrees C). Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories. In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point). Top with frozen tater tots. Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

Quiche Lorraine

This is one of my very favorite things to eat. I LOVE quiche of any kind. I saw this recipe on Pinterest and thought I'd give it a try and it was fantastic! Easy to make and since I was making one I decided to make two. It sure didn't take long for them both to disappear. I love having something that is quick in the morning and you can't get anything easier than popping a slice of this in the microwave in the morning!


I actually ate more of this for dinner and lunch than I did
for breakfast! A slice and a salad and I was good to go!

Quiche Lorraine
Ingredients
  • 1 9 inch unbaked pie crust
  • 1 C shredded Swiss cheese
  • 3 slices bacon, cooked and crumbled
  • 1/4 C ham, minced
  • 2 green onions, sliced and chopped
  • 3 eggs, slightly beaten
  • 1 C half and half
  • 1/2 tsp salt
  • 1/4 tsp dry mustard
Instructions
  • Bake unpricked pastry shell for 5 minutes at 425 degrees
  • Remove from oven and place cheese, bacon and ham in bottom of shell
  • Add green onion
  • In medium bowl mix together eggs, cream, salt and dry mustard
  • Pour evenly over cheese mixture
  • Bake at 325 for 45 minutes or until set
  • If the edges of the crust begin to get to brown cover them with foil
  • Remove from oven and let stand for about ten minutes before serving
  • Makes 6 servings

Fruit Dip

I was looking for a different fruit dip other than the good old stand by of Marshmellow Creme and Cream Cheese and I came across this recipe and just had to try it. It was AWESOME but be warned, it makes a lot!.



Fruit Dip

1- 3.4oz pkg Instant Vanilla Pudding Mix
1 8oz container of Cool Whip
1 8oz pkg Cream Cheese, softened
1 c Powdered Sugar
1 c Whole Milk

Mix all ingredients together until well combined.
Serve Chilled.

Maple Cranberry Spread

I went to another art day with my scrapbooking friends and brought along a new recipe for them to try. I pinned the recipe for Maple Cranberry Spread a while ago on my Pinterest breakfast board from the Inspiration Cafe blog and thought there wasn't a better time to try this since all of my friends are guinnea pigs when it comes to new recipes that I find! Plus I have been looking for a way to save money and this will save me a ton of money by not having to buy already flavored cream cheese!



Maple Cranberry Spread

1 8oz pkg cream cheese, softened
1/2 c dried cranberries
1/3 c maple syrup
1/4 c toasted pecans, chopped

Mix all together using an electric mixer. Cover
and refridgerate for several hours.

Makes 1 1/2 cups

Sopapilla Cheesecake

I pinned this recipe quite a while ago from Pinterest and since I had all the ingredients on hand I thought that I'd make this and take in a treat to work. Everyone loved this and said it was a real winner! I will definately be making this again since it was so very easy. 

I read the comments on the recipe and many people said that this is awesome when you add fruit to it espically pineapple. I will try it that way next time plus this would be fantastic as a brunch item instead of a dessert.


Sopapilla Cheesecake


Ingredients:
-2 cans Pillsbury butter crescent rolls (buy the seamless version if you can find them!)
-2 (8oz) packages cream cheese (softened)
-1 cup sugar
-1 teaspoon vanilla
-1/4 cup butter (melted)
-Cinnamon and sugar (I used about 1/4 cup sugar and 1 tbs cinnamon)

Instructions:
Unroll and spread 1 can crescent rolls on bottom of un-greased 9x13 inch pan. If you aren't using the seamless crescents, be sure to smooth out the seams before adding the filling. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

Breakfast Casserole

Another Pinterest find! Awesome and VERY easy to make!




Breakfast Bake

1 can Crescent Rolls
1 lb cooked breakfast sausage, crumbled
2 c. mozzarella cheese
6 eggs
1 c milk
Salt, pepper and garlic powder to taste

Place the Crescent rolls on the bottom of a sprayed pan, then sausage crumbles, 2 cups of mozzarella cheese, then whip 6 eggs, 1 cup of milk and salt, pepper and garlic powder together. Pour over the top and bake on 425* for 20 minutes. Let sit 10 minutes before cutting.

Homemade Caramel Rolls

My friend Tammy gave me this recipe and it sure is good and very easy! I make this one a lot.

Caramel Rolls

20 frozen dinner rolls
1 stick butter
1 c brown sugar
1 pkg cook and serve butterscotch pudding
touch of milk
Spray a 9x13 pan and place 20 frozen dinner rolls in pan. Melt butter. Add brown sugar,
pudding and mix together. Add a touch of milk to thin out just a little. Pour mixture over
frozen rolls, let rise and bake for 350 degrees for a half hour. Invert pan onto a serving
dish and serve warm.

I do this right before I go to bed and let them rise overnight and I bake them in the
morning and they are fantastic!!!! Just make sure that you do not use instant pudding. I did
that twice and had to throw away two batches!

Cinnabon Cinnamon Roll Cake

While I have been off of work with foot surgery I have been bored out of my mind so I am turning to cooking and baking. Now baking is not something I do often because I do not like to bake but I had to take some paperwork into my job and I thought I'd bring my friends in some treats. I found this recipe on Pinterest and thought it would make a good breakfast treat and I have to say that not only was it easy but everyone really liked it too!



Cinnabon Cinnamon Roll Cake


3 cups flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cup milk
2 eggs
2 tsp vanilla
4 T butter, melted
2 sticks (1 cup) butter, softened
1 cup brown sugar
2 T flour
1 T cinnamon
2/3 cups nuts (optional)

Glaze:
2 cups powdered sugar
5 T milk
1 tsp vanilla

With an electric mixer or stand-up mixer, mix flour, sugar, salt, baking powder, milk, eggs, and vanilla. Once combined well, slowly stir in 4 T melted butter. Pour batter into a greased 9x13" baking pan.
In a large bowl, mix the 2 sticks of softened butter, brown sugar, flour, cinnamon, and nuts until well combined. Drop evenly over cake batter by the tablespoon and use a knife to marble/swirl through the cake. Bake at 350 degrees for 25-30 minutes or until toothpick comes out nearly clean from center. Place powdered sugar, milk, and vanilla in a large bowl. Whisk until smooth. Drizzle over warm cake. Serve warm (we like it straight out of the oven) or at room temperature.

Apple Pumpkin Muffins

I had some extra canned pumpkin that I needed to use up and went blog surfing to find a recipe that I could use and I found this one. I had all the ingredients so I gave it a try and I do have to say that it is fantastic! I hope you try these and like them as much as I did!

Apple Pumpkin Muffins

Ingredients
• 2 1/2 cups all-purpose flour
• 2 cups sugar
• 1 tablespoon pumpkin pie spice
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 2 eggs
• 1 cup canned or cooked pumpkin
• 1/2 cup vegetable oil
• 2 cups finely chopped peeled apples

• STREUSEL:
• 1/4 cup sugar
• 2 tablespoons all-purpose flour
• 1/2 teaspoon ground cinnamon
• 4 teaspoons cold butter or margarine


Directions
1. In a bowl, combine the first five ingredients. In another bowl, combine the eggs, pumpkin and oil; stir into dry ingredients just until moistened. Fold in apples. Fill paper-lined muffin cups two-thirds full. In a small bowl, combine sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle over batter.
2. Bake at 350 degrees for 35-40 minutes or until golden brown. Cool for 5 minutes before removing from pans to wire racks

Sausage Pancake Muffins

Here's a fast and easy recipe just right for a quick breakfast. I got this recipe from Mr. Food.

Sausage Pancake Muffins

2 c pancake and waffle mix
2 eggs
1 c milk
1/2 c club soda
1 tbsp vegetable oil
4 heat and serve sausages, cut into small pieces
1/4 c pancake syrup

Preheat oven to 350 degrees. Coat a 12 cup muffin tin with cooking spray.
In a large bowl combine the first 5 ingredients, mix well and pour into muffin cups. Sprinkle the sausages over muffins. Bake for 20 - 25 mins or until wooden toothpick comes out clean. Remove from the oven and brush tops with pancake syrup. Serve warm with additional syrup.

Mexican Breakfast Sandwiches

I found this idea on one of the blogs that I haunt and thought it sounded different so I tried it and I LOVED it! I am the kind of person that needs a variety of breakfast choices and can not just eat cereal or toast every morning. This is very easy and can be served warm or cold!

Mexican Breakfast Sandwiches

Eggs
Flour Tortillas
Re-fried Beans
Cheese
Butter
Sour Cream
Salsa

Butter one side of two tortillas and place one, butter side down, onto pan. Spread beans over the entire tortilla and top with cheese. Put pan on med heat and let start to cook. In another pan cook two eggs, breaking the yolks. When eggs are cooked slide them onto the bean and cheese topped tortilla and add just a little more cheese to the eggs and top with second tortilla butter side up. Flip so the top tortilla cooks. Cook until golden brown and crisp. Cut with a pizza cutter into wedges and serve with sour cream and salsa.

You can make these smaller by only using one tortilla and spread the beans over half and put the cheese on the other half. Cook add your egg and flip the tortilla in half just like you would an omelet.

These would be GREAT for a brunch, they can be made ahead of time and just warmed up in the oven or on top of the stove.

Blueberry Kuchen

This recipe is from a Taste of Home cookbook that my friend Liz had and let me borrow. Now if you know me you know that I HATE to bake and when I do the recipe HAS to be very easy and simple, well this covers the gambit!

Blueberry Kuchen

1 1/2 c flour
3/4 c sugar
2 tsp baking powder
1 1/2 tsp grated lemon peel
*1/2 tsp nutmeg
1/4 tsp salt
2/3 c milk
1/4 c butter
1 egg beaten
1 tsp vanilla
2 c fresh or frozen blueberries

Topping;
3/4 c sugar
1/2 c flour
1/4 c melted butter

In a bowl combine the first 6 ingredients. Add milk, butter, egg and vanilla. Beat for 2 mins. Pour into a greased 9x13 and sprinkle with blueberries. In a bowl combine topping ingredients and toss with a fork until crumbly. Sprinkle over blueberries. Bake at 350 degrees for 40 mins until lightly browned. Yield 12 servings.

*When I made this I thought it had too much nutmeg so the next time I make it I will only put in half of the nutmeg and replace the other half with cinnamon. I also forgot to add the lemon peel and it tasted wonderful!

Breakfast Egg Cups

I found this recipe and just had to try it and boy it was really good! You could start these, take your shower and have a nice hot breakfast ready for you when you get out!

Breakfast Egg Cups

Thin sliced ham or Canadian bacon
eggs
salt and pepper
shredded cheddar cheese

Pre heat oven to 375 degrees. In a muffin pan place ham or Canadian bacon making a cup. Break egg into meat cup and add the salt and pepper. Top the egg with shredded cheddar cheese. Bake for 15-17 mins or until egg is done. I baked mine for 20 mins and the egg was not runny at all.

Bapple Bread

I got this recipe from Mr. Food and I thought since I had everything on hand that I'd try it and it was really good. I am a nut freak so next time I will add some nuts to it.

Bapple Bread

4 ripe bananas
1 c sugar
1/2 c apple sauce
2 eggs
1 tsp baking soda
1 tbsp baking powder
1 tsp salt
1 tsp vanilla extract
2 c all purpose flour

Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with cooking spray. Place bananas in a large bowl and mash with a hand mixer. Stir in sugar and let stand 15 mins. Add applesauce, vanilla and eggs, beat well. Add remaining ingredients and mix thoroughly. Pour into loaf pan and bake 55 mins or until a tooth pick inserted comes out clean. Let stand 10 mins before removing from the pan. Cool.

Makes 1 loaf

Dani's Breakfast Casserole

My friend Dani brought this to a scrapbooking weekend at Beaver Landing and I have never had anything so good! It is the best breakfast casserole I have ever had and the nice thing about this is that you fix it the night before and bake it in the morning!





Dani's Breakfast Casserole




Grease the bottom of a 9x13 pan.


Cover bottom of pan with 1 package cheesey garlic croutons


Layer 1 1/2 lb meat (ham, sausage or bacon)


Next layer 1 can drained artichoke hearts


Next layer of sliced fresh mushrooms


2 c. grated cheddar cheese


Beat together and pour over layers


5 large eggs, beaten


3/4 tsp dry mustard


2 1/4 c milk (must be whole milk)


Cover and refridgerate overnight.


Preheat oven to 350 degrees. Mix 1 can of


cream of mushroom soup and 1/2 can of milk.


Pour over and back for 1 1/2 to 2 hours.
